Simple Blender Mayo

Making mayo has never been so easy! We’ve simplified how to make one of the nation’s favourite store cupboard condiments, using 5 ingredients in 5 minutes – all you’ll need to wash up is the blender. Why not try using this homemade mayo to make our delicious coronation chicken sandwich filler?

Ingredients

  • 2 large FREE eggs
  • 1 tsp Dijon mustard
  • 250ml good-quality oil, we used rapeseed but any vegetable-based oil would work
  • 1 - 2 tbsp white wine vinegar
  • Sea salt

Method

  1. Separate the eggs, placing the yolks in the food processor along with the dijon mustard and 1 tablespoon ice cold water.
  2. Blitz the yolks for 30 seconds on high just until the ingredients are mixed together. Measure the oil into a jug before starting to very, very slowly pour the oil into the yolk mixture - the food processor needs to be on a medium-high speed at this point.
  3. Once all the oil has been added, the mayonnaise should start to thicken nicely, turn off the processor. Add 1 - 2 tablespoons vinegar depending on your desired consistency and a generous pinch of salt.
  4. Blitz the mayonnaise for a brief moment to incorporate the seasoning before spooning into serving bowl or sterilised storage jar. Store in the fridge until ready to use and eat within 5 days.
