Coronation Chicken
A delicious and quick use for our homemade mayonnaise (head over to the recipe page for details on how to make), this British classic makes plenty to feed the whole family, either in a sandwich or on top of a jacket potato.

Serves 4 people
Ingredients
- 250 - 300g homemade mayonnaise
- 1 tbsp korma paste
- 2 tbsp mango chutney
- 1 tbsp flaked almonds, toasted
- 1 tbsp sultanas
- 250g cooked chicken, chopped into small chunks
- TO SERVE
- 4 baguettes
- Carrots, shredded
- Cucumber, thinly sliced
Method
- In a bowl, combine the homemade mayonnaise, korma paste and mango chutney. Stir well.
- Sprinkle in the almonds along with the sultanas before adding the chopped chicken. Stir all the ingredients together really well. Season if required.
- Spoon the coronation chicken into the baguettes then top with the carrot and cucumber for extra crunch.
