Unicorn Birthday Cake
All sprinkles and rainbows, this fabulous unicorn birthday cake is easier to make than you might think. By using one 20cm round cake tin and some clever decorating, you’ll have a cake everyone will think is magic! Your unicorn can be whatever colour you want it to be – just make sure you have plenty of Smarties to match!

Serves 8-12 people
Ingredients
- 170g salted butter, softened
- 170g caster sugar
- 1 heaped tsp vanilla paste
- 3 large FREE eggs
- 170g self-raising flour
- 1 tsp baking powder
- 1 tbsp milk
- FOR THE BUTTERCREAM
- 1 pot pre-made Betty Crocker Vanilla Buttercream
- OR
- 100g salted butter, softened
- 200g icing sugar
- 1 tsp vanilla paste
- Dash of milk
- TO DECORATE
- Smarties, in chosen colours
- Black icing pen
- Sprinkles
Method
- Preheat the oven to 190C/170C fan/gas 5.
- In a bowl, cream together the butter, sugar and vanilla using a wooden spoon until light and fluffy. Alternatively, use an electric or stand whisk.
- Crack in 1 egg along with a tablespoon of flour and mix until it’s well combined. Repeat the process with the remaining 2 eggs. Once all the eggs are incorporated, sieve in the flour, baking powder and milk and fold through the mixture to form a thick smooth batter.
- Pour the batter into the prepared baking tin and bake in the oven for 25 - 30 minutes until golden, risen and cooked all the way through. Remove from the oven and allow it to completely cool in the tin.
- In the meantime, make the buttercream (if not using pre-made) by simply creaming together the butter, sugar and vanilla paste until light and fluffy. You can use a dash of milk to loosen if required.
- Place the cake on your desired cake board or plate. Using the template provided and following the video, cut the cake using a sharp knife, creating a unicorn horn and ear with the off cuts. Use a little buttercream to secure the pieces to the main cake.
- Spread the remaining buttercream over the top of the cake, and sides if desired. Using rows of the same-coloured smarties create the unicorn mane. Use the black icing pen to draw an eye, nose and mouth before decorating the horn with sprinkles.
