Sweet potato fried FREE egg patties

These sweet potato patties are the ultimate fuss-free lunch or speedy brunch when you want something comforting, filling and just a little bit fancy without spending ages in the kitchen. Crispy cheese creates the dreamiest golden crust, while sunny FREE eggs and punchy pesto bring heaps of flavour to every bite.
The best part? Everyone can make theirs their own. Load them up with crispy onions, creamy soured cream, fresh chives or an extra drizzle of chilli oil for an eggs-tra tasty finishing touch.

Ingredients
- 2 medium/large sweet potatoes, cooked and cooled
- 100g grated mozzarella and cheddar
- Sea salt and cracked black pepper
- 2 tbsp red pesto or chilli oil
- 4 large FREE eggs
- To serve
- Soured cream or creme fraiche
- Sea salt and cracked black pepper

- Chives, finely chopped
- You will need
- Burger press (or small frying pan)
- Parchment paper
Method
- Cut the cooked sweet potatoes in half to create 4 portions. Place each piece between two sheets of parchment paper and squash down into patties using a burger press or the base of a small frying pan.
- Heat a large frying pan over a medium-high heat and make 4 small piles of grated cheese roughly the same size as your patties. Let the cheese melt and sizzle before carefully placing the sweet potato patties on top.
- Fry for 2–3 minutes until the cheese turns beautifully golden and crisp underneath. Carefully flip and cook for another 2–3 minutes until both sides are deliciously crispy.
- Meanwhile, heat a second frying pan and spoon in 4 dollops of pesto or chilli oil. Crack a FREE egg onto each one and fry for 3–4 minutes until the whites are set and the edges are lovely and crispy.
- To serve, place a sweet potato patty onto each plate and top with a fried FREE egg. Add a generous spoonful of soured cream or crème fraiche, then season with sea salt and cracked black pepper.
- Finish with crispy onions and fresh chives for the ultimate crunchy, creamy, golden bite.
