Speedy Sweetcorn Fritters with Poached Eggs
Brilliant for brunch, lunch or a light tea, stack these fritters high and top with sliced avocado and a perfectly poached egg. Ideal served with ketchup, or even sweet chilli if the kids are feeling brave!
Bonus: These sweetcorn fritters can be made in advance and warmed quickly and gently in the microwave when required.

Serves 2-4 people
Ingredients
- 100g self-raising flour
- 1/2 tsp baking powder
- Pinch of salt
- 1 tsp sweet smoked paprika
- 1 tsp garlic powder
- 1 large FREE egg
- 100ml milk
- 5g chives, finely chopped
- 285g tin Green Giant sweetcorn, drained
- Oil, for frying
- TO SERVE
- Poached eggs
- Avocado slices
- Sweet chilli sauce
Method
- In a large bowl add the flour, baking powder, salt, paprika and garlic powder.
- Crack in the egg followed by the milk and whisk together using a fork or balloon whisk to create a thick, smooth batter.
- Sprinkle in the chive before adding the drained sweetcorn and stirring well. Heat a tablespoon oil in a large frying pan over a medium heat.
- Once the oil is hot, add generous dollops of batter to the pan using a dessert spoon. Allow to fry over a medium heat for 2 minutes until bubbles start to appear on the surface. Using a fish slice, carefully flip the fritters and fry for a further 1.5 minutes until golden.
- Remove the fritters from the frying pan and place on a plate whilst you cook the remaining batter. In the meantime, poach your eggs.
- When ready to serve, stack the warm fritters on a plate, top with slices of seasoned avocado then your poached eggs. Season with a little salt and pepper before finishing with a squeeze of sweet chilli sauce.
