Festive Pancakes
A fantastic, fun way of bringing the festivities to your breakfast table, and it's a great recipe to get the kids involved with! Serve with your choice of fresh berries, runny honey and icing sugar.
Make sure to choose cutter shapes that are not too intricate like baubles, gingerbread men and stars to make flipping and pressing out the pancakes easier.
If you are using the same cutters each time, make sure you clean the cutters well between uses as any left over pancake batter on the edges of the cutter will make your next batch stick.

Ingredients
- FOR THE BATTER
- 2 large FREE eggs
- 200ml semi-skimmed milk
- 200g plain flour
- 1/2 tsp bicarbonate of soda
- 1 tbsp caster sugar
- Oil, for frying and greasing
- TO SERVE
- A choice of fresh berries
- Runny honey or maple syrup
- Icing sugar
Method
- First, make the batter (this can be made an hour in advance and left to rest in the fridge). Crack the eggs into a large jug before pouring in the milk. Gently whisk together.
- Sieve together the flour and bicarbonate of soda before combining with the eggs and milk using a balloon whisk until a smooth, thick batter is created. Sprinkle in and whisk through the sugar.
- Heat the frying pan over a medium to low heat. Add a small dash of oil and gently heat before wiping away any excess oil with kitchen paper. Using a pastry brush, liberally oil the inside of the festive cutters before placing in the hot pan ensuring a little space between each.
- Carefully pour the prepared batter into the cookie cutters until 2/3 full. Allow to cook for approximately 2 - 3 minutes over a low heat until the batter begins to set and bubbles appear on the surface.
- Using tongs (the cutter will be hot!), carefully flip the cookie cutters over to cook the pancakes on the other side for approximately 1 minute. If the pancake doesn’t touch the hot surface, gently press the pancake down in the cutter to make contact.
- Once golden on both sides, press the pancakes out of the cutters and place on a warm platter or plate whilst you repeat the process with the remaining batter.
- When the pancakes are all cooked, decorate the platter with your chosen fruits before drizzling over honey or maple syrup. Finish with a small dusting of icing sugar for extra festive sparkle!
