Festive Eggy Toast

A very simple but super festive breakfast, brunch or quick lunch idea, these festive toasts are really fun to make with the kids. Just make sure not to over-egg the centre as the design might disappear!

Serves 4 people

Ingredients

  • 3 large FREE eggs
  • Sea salt and cracked black pepper
  • 30g cheddar cheese, finely grated
  • 10g chives, finely chopped
  • 4 slices thick-cut bread
  • Oil, for greasing
  • YOU WILL NEED
  • Large non-stick frying pan with lid
  • Festive cookie cutters

Method

  1. In a jug, crack in the eggs and season with a little salt and pepper. Whisk in the cheese and chives and set aside whilst you prepare the bread.
  2. Place the slices of bread on a chopping board. Select your chosen festive cookie cutter and cut out the shape in the centre of each slice.
  3. Place the cookie-cuttered bread slices in a pan over a medium heat - to ensure no sticking, you might want to wipe the surface of the pan with a little oil. Toast on one side for 1 - 2 minutes until golden and flip. Toast the cut-out pieces of bread too to avoid any waste.
  4. Carefully pour the egg mixture into the hole in the bread leaving a little room for the egg mixture to expand. Place on the lid and cook for 2 - 3 minutes. Once the egg has set remove from the pan using a spatula and repeat with the remaining slices of bread.
  5. Serve with you desired sauce and enjoy!
