Serves 4 people
Ingredients
- 400g ready-made pizza dough (look for Jus-rol or Pizza Express)
- 1 medium FREE egg, beaten
- FOR THE FILLING
- 4 thawed frozen spinach discs, squeezed to remove water
- 3 large FREE eggs
- 30ml double cream
- 30g grated Parmesan
- 120g grated mozzarella
- 1 garlic clove, grated
- A few chives for the whiskers
- Salt and pepper
Method
- Lay the ready-made pizza dough out on a flat surface and sprinkle it with a little plain flour. Roll this out to a large rectangle, roughly as thick as a £1 coin. Then cut it into squares, roughly 5 lines down and 7 to 8 across.
- Roll up each square into a ball and lay on a lined baking tray. Repeat, slowly building your bunny. Start by making the face, then create the oval ears.
- Once all the squares are used up and you are happy with your shape, brush them with egg and sprinkle with some grated cheese for added flavour.

- Now make the filling by mixing all the ingredients in a bowl and season.
- Spoon the mixture into the circle so it fills up, then into the gap in the ears and pop it in the oven at 200°C for 24 minutes. Once baked, it should be golden and springy to the touch.
- Tear apart and dip the dough into the delicious middle filing.
