Bubble and Squeak Marmite Loaf
An egg-cellent way to use up any Christmas leftovers, this loaf is a great Boxing Day bake that is packed full of flavour. With lashings of Marmite and topped with tasty cheddar, this is the perfect addition to your cheese and crackers plate.

Ingredients
- 250g - 300g leftover veg (we used carrot, peas, sprouts and potatoes)
- 1 tbsp salted butter
- 150g leftover meat and stuffing (we used turkey and sage stuffing)
- 1 tbsp rosemary, finely chopped
- 6 large FREE eggs
- 1 tbsp Marmite
- 70g strong cheddar cheese
- 75g self-raising flour
- Sea salt and cracked black pepper

- Large loaf tin
- Paper liner

Method
- Preheat oven to 200C/180C fan/gas 6.
- Roughly chop your leftover veg into small pieces. Add the butter to a large frying pan over a medium heat and add your veg.
- Roughly chop your leftover meat and stuffing and add to the pan along with the rosemary and fry for 4 - 5 minutes until everything begins to colour.
- In a large bowl, crack in the eggs and add the marmite and 50g cheese. Briefly whisk together to break up the eggs before sprinkling in the flour and seasoning with a little salt and pepper. Fold in the flour to create a thick batter.
- Pour the batter into a lined loaf tin and sprinkle with the remaining cheese. Place in the oven and bake for 30 minutes until the cheese is golden on top and the loaf has cooked through.
- Allow the loaf to cool for at least 20 minutes but ideally until fully cooled. Slice into thick slices and serve alongside cheese and chutney.
