Big green bacon and egg wrap
Meet the wrap that’s secretly doing rather a lot. Spinach, oats and FREE eggs are whizzed into a brilliantly green wrap, then loaded up with crispy bacon, scrambled egg, lettuce, tomato and a little chilli mayo. Quick, filling and ready in 10 minutes, with plenty of room to swap in whatever you’ve already got in the fridge. Lunchtime, sorted.

Ingredients
- For the wrap
- 30g fresh baby spinach leaves
- 40g oats
- 2 large FREE eggs
- Sea salt and cracked black pepper
- ½ tbsp Everything Bagel seasoning or mixed seeds
- For the filling
- Chilli mayo
- Crispy bacon
- Scrambled egg
- Shredded lettuce
- Sliced tomato
- You will need
- Bullet blender
- Non-stick frying pan, greased with a little oil if required
Method
- Add the spinach and oats to a bullet blender, then crack in the FREE eggs. Season with a pinch of salt and pepper and blitz until you have a smooth, vivid green batter.
- Heat a little oil in a non-stick frying pan over a medium heat, then wipe away any excess with kitchen roll.
- Pour in the batter, gently swirling the pan to coat the base. Sprinkle over the Everything Bagel seasoning or mixed seeds and fry for 2–3 mins, until the wrap has set and bubbles are visible on the surface.
- Using a fish slice or silicone spatula, carefully flip the wrap and fry for a further 1 min on the other side.
- Remove from the pan and leave to cool completely. Place the wrap on a chopping board and cut from the centre to one edge, ready to fold it into quarters.
- Starting with the bottom-right quarter, spread over the chilli mayo and top with crispy bacon. Fold this quarter upwards onto the top-right quarter, then add the scrambled egg on top.
- Fold the scrambled egg quarter across to the top-left. Add the shredded lettuce and sliced tomato to the bottom-left quarter, then fold the top-left quarter down to enclose everything.
- Pop onto a plate and tuck in.
