Banana Caterpillar Pancakes

If your kids are fans of ‘The Very Hungry Caterpillar’, then this is a great way to serve your pancakes to them this Pancake Day! This recipe makes 12 pancakes in total, then all you need to do is simply decorate with your favourite fruits and enjoy.

Ingredients

  • FOR THE PANCAKES
  • 1 medium-sized ripe banana
  • 2 large FREE eggs
  • 125g self raising flour
  • 75ml milk
  • Oil, for frying
  • TO SERVE
  • 2 kiwis
  • 8 blueberries, 4 big, 4 small
  • 2 apple slices, cut into matchsticks
  • 4 strawberries
  • Extra fruit & honey, to serve

Method

  1. First, make the pancake batter. Mash the banana in a large jug using a fork, until smooth. Crack in the eggs before sieving in the flour.
  2. Whisk together using a fork just until you get a very thick, but lump-free batter. Pour in the milk and whisk again until a smooth batter is created.
  3. Heat a tablespoon oil in a large frying pan over a medium heat, wiping away any excess oil with a little kitchen roll. Pour the batter into the pan to form small pancakes approximately 5cm in diameter.
  4. Allow the pancakes to cook for 1 - 2 minutes until you start to see bubbles on the surface and the batter begins to set. Carefully flip the pancakes using a fish slice or spatula and cook for a further 30 seconds - 1 minute on the other side just until brown. Remove from the pan and repeat with the remaining batter - it should make 12 pancakes.
  5. Cut each kiwi into 5 slices when ready to serve. To make your two caterpillars, alternate 6 of the pancakes with the 5 slices of kiwi in a wavy line to create the body of the caterpillar. Repeat with the remaining pancakes and kiwi slices.
  6. Add the large blueberries to the front pancake to make the eyes, apple matchsticks as the antenna, and small blueberries at the top of the antenna. Remove the green of the strawberries and slice in half. Cut a small “v” out the bottom of each strawberry piece to form the appearance of little legs. Add 4 strawberry pieces to each caterpillar body.
  7. Serve alongside extra fruit and runny honey for drizzling.
