Baby-friendly banana & coconut slice

Simple, wholesome and packed with goodness. Made with ripe bananas, FREE eggs, peanut butter and coconut, this easy slice is perfect for little ones and grown-ups alike. Soft, naturally sweet and ideal for breakfast, snack time or on-the-go family fuel.

PREP TIME: 5 minutes COOK TIME: 15 minutes

Serves MAKES 8 - 12 slices (dependent on portion size; child or adult) people

Ingredients

  • 2 overripe bananas, mashed
  • 2 large FREE eggs, lightly whisked
  • 130g smooth peanut butter
  • 150g desiccated coconut
  • 1 tsp baking powder
  • YOU WILL NEED
  • 20 x 20cm baking tin, greased & lined
  • Cook's Notes:
  • As this recipe has no artificial sugar, it really relies on the sweetness of the bananas so the riper the bananas the better.

Method

  1. Preheat oven to 180C/170C fan/gas 5.
  2. Add the mashed banana, whisked eggs, peanut butter, desiccated coconut and baking powder and carefully mix until well combined and transfer to baking tin.
  3. Smooth the batter on top and place in the oven to bake for 15 - 18 minutes until golden and set.
  4. Remove from the oven and allow to fully cool in the tin before turning out and slicing into pieces. Serve alongside yoghurt and fresh fruit.
