Super Speedy Pizza Eggs

A brilliant way of getting extra eggy protein into kids whilst still serving them pizza, this up-side-down pepperoni style pizza is also super speedy and only uses one pan!

This recipe required a really good non-stick pan to ensure flipping out your pizza is stress-free! The pan will probably also benefit from greasing but make sure there is no residual oil let in the pan as this could cause your pepperoni and cheese to burn.

Serves 1 adult or 2 kids people

Ingredients

  • 8 - 10 pepperoni slices
  • 80g grated cheese (we use cheddar & mozzarella blend)
  • 2 large FREE eggs
  • Sea salt & cracked black pepper
  • 1 tortilla wrap
  • 1 - 2 tbsp pizza sauce

Method

  1. Place a non-stick frying pan over a medium heat. Lay the pepperoni slices in the hot pan before sprinkling over the cheese.
  2. Crack the eggs into a bowl, season with salt and pepper and lightly whisk. Pour the eggs over the pepperoni and cheese and leave to cook.
  3. Quickly in the meantime, place the wrap on a board and spread oven the pizza sauce. Flip the wrap over and place sauce-side down over the egg to form the base of the pizza. Allow the pizza to cook over a medium heat for approximately 3 - 4 minutes until the pepperoni starts to crisp and the egg has set - place on the lid of the frying pan if the eggs are not setting.
  4. Take a plate the same diameter as the frying pan and cover the wrap. Carefully flip the entire frying pan holding the plate in place. Once the pizza has flip out pepperoni-side up on the plate, slide back into the frying pan and cook the wrap for 1 - 2 minutes just until golden and crisp.
  5. Slid the pizza out of the pan onto a board and cut into slices and serve. Scatter with optional extras like fresh basil, rocket or sliced olives to finish.
