20 minutes
Serves 4 people
Ingredients
- 250g long grain rice
- 3 tablespoons vegetable oil
- 1 onion, finely chopped
- 120g frozen peas
- 4 Free Range Ethical Eggs, beaten
- 2 spring onions, sliced
Method
- First, boil the rice by following the instructions on your chosen rice packet.
- Spread the rice out on a large plate, allowing it to dry a little.
- In a large wok, heat the vegetable oil on a high heat. Tip – drop an onion in to check it sizzles first, then add all the onions and fry for around 5 minutes, until softened.
- Add the peas to a saucepan and cover with boiling water. Cook for 3 minutes, until tender, then drain.
- When the onion is slightly browned, add the rice and peas and stir together. Fry for around 3 minutes, then move the onion, rice and peas to the side of the pan.
- Add a splash of extra oil, followed by the beaten eggs.
- Once the eggs begin to cook, mix the eggs, onion, rice and peas together and fry until the egg is cooked to your liking.
- Serve the rice topped with the sliced spring onions. For a spicy kick, why not drizzle with your favourite sweet chilli sauce? This is one of our favourite fakeaways that truly gives the takeaway version a run for its money!
