Egg-in-the-Hole Bagel
Baking your FREE egg in the hole of the bagel is just the start of this eggcellent recipe. Stuff your bagel with whatever yummy ingredients you like - we’ve gone for the classic combination of smoked salmon & rocket and ham & mayo - but this speedy lunch can be easily tweaked to include everyone's favourite fillings.

Ingredients
- FOR THE BAGELS
- 50g cheese, we used Smoked Applewood
- 4 bagels
- 4 FREE free range eggs
- FOR THE FILLINGS
- Mayonnaise
- Ham
- Smoked salmon
- Rocket leaves
Method
- Preheat the oven to 200C/180C fan/gas 5.
- Finely grate the cheese and place four equal piles of cheese on the lined baking tray, in circles the diameter of your bagels.
- Slice the bagels in half before cutting a slightly larger hole in the top halves to encase the eggs. Place the top halves of the bagels on the cheese pile and press to ensure the bagels have stuck to the cheese.
- Carefully crack an egg in the well of the bagel tops and place in the oven, along with the bagel bottoms, to bake for 6 - 7 minutes, just until the egg has set but the yolk is still runny.
- Remove the bagels from the oven and allow to sit for 1 minute whilst you prepare the fillings. We love mayo, ham and leaves as well as mayo, smoked salmon and rocket.
- Layer the fillings onto the bottom halves of the bagels. Using a fish slice, carefully remove the top bagels from the baking paper and gently place on top.
- Slice and enjoy!
