
Cheese & Pickle Croque Madame
We’ve taken the classic ham and cheese sandwich and given it a ‘could-this-be-more-British’ upgrade with our pals at Warburtons and Branston Pickle. Technically a Croque Madame (ooh la la) because of our fried egg on top (which is a revelation by the way), this is our go-to snack, lunch, or light dinner and it’s always a winner!

Ingredients
- 2 slices Warburtons Toastie white bread
- 2 tablespoons original Branston Pickle
- 50g thick-cut, good quality ham
- 50g cheese of your choice, we use a cheddar and mozzarella mix, grated
- 1 tablespoon salted butter
- 1 Big N Free egg
- Sea salt and cracked black pepper
Method
- Place two slices of Warburtons Toastie white bread on a clean board and spoon a tablespoon of Branston Pickle on each slice, spreading it out evenly using the back of the spoon.
- Sprinkle each slice with the cheese before laying the ham on one side. Carefully flip just the cheese slice onto the ham slice to form a sandwich that encases the ham in the middle.
- Melt the butter in a large, non-stick frying pan over a medium heat. Gently place in the sandwich and allow to toast for 2-3 minutes until golden and crisp. Carefully flip the sandwich and toast for another 2 minutes until golden and the cheese is nicely melted and oozy.
- In the meantime, crack the egg into the pan and fry until the white is perfectly set and the yolk is still runny.
- Using a spatula, remove the toasted sandwich from the pan onto a serving board or plate. Lay the fried egg on top of the sandwich and season with a little salt and pepper. Enjoy straight away alongside a fresh green salad if you want to make it more of a meal.
