Cheese & Chilli Eggy Toastie
This recipe is a delicious hybrid between eggy bread and a cheese and chilli toastie - perfectly fried eggy bread filled with lashings of sweet chilli jam and melty cheddar cheese, whats not to like!
The idea of this sandwich means you can fill it with whatever you fancy, but a cheese and some kind of sauce works perfect. Why not try mozzarella and pesto, red Leicester and caramelised onion chutney or smoked cheese and tomato chutney?

Ingredients
- 2 thick slices of bread
- 2 tbsp salted butter
- 2 large FREE eggs
- Sea salt & cracked black pepper
- 50g cheese (of your choice), sliced
- 2 tbsp sweet chilli jam
Method
- First, take the sliced bread and butter one side. Place a frying pan over a medium heat and melt 1 tablespoon of butter.
- Crack the eggs into a bowl or jug, whisk lightly and season with salt and pepper. Pour the eggs into the buttered frying pan and swirl around to cover the bottom of the pan. Lay in the slices of bread butter-side up. Fry for 2 - 3 minutes until the eggs have set.
- Using a fish slice or spatula, carefully flip the egg and bread so the slices are touching the frying pan. Gently fold in the egg on all sides so it sits within the two slices of bread.
- On one slice, lay on the sliced cheese, on the other spread on the chilli jam. Fold one slice of bread onto the other enclosing all the ingredients to make a sandwich.
- Toast on one side for 1 - 2 minutes until golden before flipping and repeating on the other side.
- When bread golden and cheese melted, remove from the heat, place on a board, slice in half and serve.
