Prep: 5 mins | Cook: 15 mins
Serves 4 people
Ingredients
- 4 good-quality sausages
- 4 - 8 rashers good-quality bacon
- 4 wholemeal tortilla wraps
- 6 FREE free range eggs
- 1 tbsp milk
- Sea salt & cracked black pepper
- 100g pepper, finely diced
- 40g cheese, grated or crumbled
- Sliced avocado (to serve)
- Chilli sauce or ketchup (to serve)
Method
- Preheat the oven to 200C/180C fan/gas 6.
- Place the sausages and bacon on a baking tray and cook according to packet instructions. Crack the eggs into a bowl and lightly whisk together with the milk and a little seasoning.
- Add the diced pepper and cheese to the eggs and whisk briefly to combine. Pour the mixture into the prepared baking tray and bake in the oven for 10 minutes.
- Once cooked, remove the egg, sausages and bacon from the oven and slice the egg into 4 equal slices. Lay out 4 wraps on a clean surface and add a slice of egg to each. Top the egg with the sausage and bacon before rolling up ‘burrito’ style.
- Place a large frying pan over a medium heat and toast the wraps on all sides for 1 minute, turning once golden and toasted.
- Serve the burritos straight away with sauce of your choice and slices of avocado. Alternatively, allow the burritos to cool before wrapping tightly in foil and storing in the freezer until required.
- To reheat, place in the airfryer, still wrapped in foil, and bake on 180C for 12 - 15 minutes until warm through and crisp.
